News from our Cafeteria:

Date 16/11/2017

My name is Florian Kliem, and I am a qualified chef. I have been in Kenya for about 6 months. I have the pleasure of working at the German School Nairobi since the 15th of November and am responsible for the entire kitchen area.

After a classic apprenticeship at the gourmet restaurant Tigerpalast in Frankfurt am Main, I worked for about 10 years in upscale national and international gastronomy before starting my own business in 2011. In Berlin, I have built up several companies with a special focus on sustainable, ecological and regional gastronomy and have supported various projects in the field of food and agriculture. For example, I worked for the Federal Ministry of Food and Agriculture and wrote various concepts for the "Zu Gut für die Tonne" (Too god for the Dustbin) a campaign on the subject of food waste. In addition, I was in charge of the 2000m² project of the “Zukunftsstiftung Landwirtschaft” of the GLS Bank Bochum.

My own business mainly involved working in and around the now internationally-known market hall “Neun”, where our restaurant and catering kitchen was located. I would now like to bring my experience and knowledge to the German School Nairobi, and in addition to good, healthy and sustainable school meals, I would also like to do educational work with the pupils in the future. In addition to a partial conversion to ecological meals, I plan to create a school kitchen garden, as well as involve pupils in the design of school catering. Other conceivable models would be the setting up of a "pupil company" with its own products such as jam, juices, sauces etc. or even try and create the school’s own farm.

Enough of future dreams though! For the time being, it is important to establish a reasonable kitchen structure and improve the quality of school catering and the cafeteria's facilities.

I am always open to feedback and suggestions!

With culinary greetings,

Florian Kliem
